Serves: 4 | Prep: 10 Minutes Cooking: 25 Minutes
2 large peaches pitted and cut in halves
2 cloves garlic finely diced
salt and pepper
8 cups butter lettuce
12 cherry tomatoes
10 slices prosciutto
1/2 avocado sliced
2 tblspn feta cut into cubes
Preheat oven to 200C. Place peaches into oven tray lined with baking paper. Sprinkle garlic, salt and pepper and olive oil over peaches. Drizzle 2 tblspn Sticky balsamic vinegar over peaches. Cook Peaches for 25 mins, or until golden.
While peaches are cooking, on another tray lined with baking paper line out prosciutto. Cook prosciutto for 20 mins turning after 10 mins.
As peaches and prosciutto are cooking, start preparing salad. In a salad bowl place well washed and drained lettuce. Top with avocado, cherry tomatoes, prosciutto, feta and peaches. Finally, Drizzle with Woolmore’s Fine foods Sticky Balsamic Vinegar just before serving. Enjoy!
