Preserved Lemon Hummus

Woolmore’s Fine Foods Preserved Lemon Hummus. Simple, fresh and delicious. The preserved lemon achieve a salty citrus pop for a summer dip, which is quick to whip up!

Serves: 4 | Prep + cooking time: 15 mins

1 Woolmore’s Fine Foods preserved lemon (abt 3.5 cm)

400g can Chickpeas drained and washed

2 tbsp Olive oil

2 1/2 tbspn Tahini

1/2 tsp salt to taste

15 g fresh mint

1/2 cup water

2 cloves garlic or just add 1 if you are not a huge fan of garlic, taste

2 tspn Za’atar

pepper to taste

Paprika for topping

Wash lemon and pat dry with towel. Slice into quarters and remove any pips. Pop the preserved lemon, chickpeas, oil, tahini, garlic, mint leaves, za’atar, salt and pepper into a food processor and blend. Blend until you achieve your required consistency and add water to smooth the dip. Season and taste as required. Serve in a bowl with drizzle of oil and light paprika for garnish.

Hommus is ideally served on the day but can be covered and stored in your fridge up to 3 days.

Serving Suggestion:

Hummus is delicious served with grilled bread lathered in oil with salt and pepper and a glass of white wine.
