Cheesy artichoke and spinach dip w. Woolmores Fine Foods Preserved Lemon • This is an easy gorgeous winter dip, you’ll be eating it straight with a spoon! Always a winner at party’s.

If this wasn’t already an easy dip it can be made up to 3 days before serving. This also gives the Preserved Lemons and artichoke time to marinate and will give an even more delicious flavour.
Serves: 6 | Prep: 15 min | Cook: 25minutes
250g cream cheese ( Use sour cream if you want something lighter.)
1/4 cup mayonnaise
1/4 cup grated parmesan cheese
1/4 cup shredded cheese
1/4 cup mozarella cheese
2 cloves garlic, crushed
1 bunch basil, finely chopped
1/2 cup chopped spinach
400g tinned artichoke hearts, drained and chopped
1 1/2 tspn finely chopped Woolmore’s Fine Foods Preserved Lemon (the lemon is a strong flavour so taste, before you add more.)
Salt & black pepper
Method:
Preheat oven to 180C. Lightly grease a small baking dish or terracotta bowl.
In a medium bowl mix together cream cheese, mayonnaise, parmesan cheese, shredded cheese, garlic, basil, salt and pepper. Stir in the artichoke hearts, spinach and Woolmore’s Fine Foods Preserved Lemon.
Spoon the mixture into your prepared dish. Top with mozzarella cheese, this is a super cheesy dish so, add more if you think it needs it. Cook in oven for 25 minutes until bubbly and golden.
This dip is delicious with toasted bits of baguette or crackers. If you want a healthier option it can be served with carrot or celery sticks. If by a slim chance you have dip leftover it can be reheated in the oven with more cheese on top if required. It can also be stirred though pasta or baked on chicken. Enjoy!
