Fig and caramelised onion meatball salad w. Woolmores Fine Foods Star Anise Sticky Balsamic  • Perfect side salad or an easy healthy lunch option for summer • We bought the delicious caramelised onion meatballs from our lovely stockist at Broadway Meat Store, Glenelg.

This salad is very open to interpretation if you don’t have all the ingredients don’t worry, its a great salad to use up vegetables from your fridge that are on their way to being chuck outs!

Serves: 4 | Prep/ cooking: 10 Minutes

Ingredients:

1/2 curly lettuce head

1/2 avocado

small cucumber

portion of crumbled feta

2-3 Caramelised onion meatballs **

4 figs

Woolmores Fine Foods Star Anise Sticky Balsamic Vinegar

Method:

To start, Loosely break apart the lettuce and place on a large plate.

Then get a small pan on high heat, while that’s warming pull apart the meatballs into smaller bits this will make it quicker to cook and easy to distribute throughout the salad. Once the pan is hot, throw the meatball bits into the pan and turn low. We chose to use Caramelised onion meatballs for this recipe because they bring a superior taste and save time having to prepare something when the meatballs are full of flavour already.

While the meat is cooking on low, cut the cucumber into thin slices and dice the avocado and figs. Now, toss them into the salad.

The meatball bits should be ready now so go ahead and add to the salad and add the crumbled feta now as well.

Lastly, for the final delicious touch generously drizzle the Woolmores Fine Foods Star Anise Sticky Balsamic Vinegar, then serve.

** For a vegetarian option use roasted pumpkin, chickpeas or fried eggplant.
