Slow Cooker Roast Chicken w. Woolmore’s Fine Foods Sticky Balsamic Vinegar • A beautiful Winter meal for a family dinner or Sunday lunch. The Sticky balsamic Vinegar, adds a delicate sweetness and depth to your roast.

This is an incredibly easy and hearty recipe to make using a slow cooker. Once you invest in a slow cooker you will never look back, it will make your busy life so much easier when it comes to dinner.
Serves: 4 | Prep + Cook: 6 1/2 hours
5 cloves garlic, crushed
1/2 cup (125ml) Woolmore’s Fine Foods Sticky Balsamic Vinegar
2 tablespoons dijon mustard
2 tablespoon olive oil
2 tablespoons coarsely chopped fresh oregano
2 tablespoon coarsely chopped fresh flat- leaf parsley
2kg ( 4-pound) free- range whole chicken
Salt & black pepper to season
Method:
Combine garlic, Woolmore’s Sticky Balsamic vinegar, mustard, oil and half the herbs in a 4.5 litre slow cooker.
Discard excess fat from chicken cavity. Place chicken in cooker, turn while coating chicken with the mixture.
Cook, covered on low, for 6 hours.
Carefully remove chicken from cooker, cover to keep warm. Transfer cooking liquid to a medium frying pan. Skim and discard fat from surface of cooking liquid. Bring liquid to the boil. Boil uncovered, for 10 minutes or until sauce is reduced to 1/2 cup.
Serve chicken drizzled with and topped with remaining herbs season.
Suggestions:
Serve with roasted cherry tomatoes and various other roasted vegetables such as pumpkin, potatoes or beans.
Have fresh bread and butter, to soak up the beautiful stock you have made from the chicken.
